SEATTLE, WA - The rule of thumb has generally been that you start a food truck, then transition to a brick-and-mortar restaurant. But lately a handful of restaurants have defied the food gods by condensing their brick-and-mortar establishments into food-truck form, including Brass Tacks, Ezell’s, Plum Bistro, Barking Frog, and The Walrus and the Carpenter.

It’s a far less natural process. Turning a food truck into a restaurant allows a kitchen to breathe, enabling new options and possibilities. The reverse transition means shedding and sacrifice, like choosing what to take with you during a fire—a really long-drawn-out fire.

But it’s often an effective marketing decision. Taking a restaurant mobile creates a more visible brand and reaches new customers, often funneling them back to the brick-and-mortar, where they can actually grab a seat.

“We’ve been a brick-and-mortar for 13 years,” says Bobby Moore of Barking Frog in Woodinville, who in May launched Barking Frog Mobile Kitchen, nicknamed Road Toad (the license plate reads RDTOAD). “We were bursting at the seams here. You can only generate so much revenue when you’ve been a brick-and-mortar for so long. We wanted to keep ourselves in front of people. I personally wanted to change with the times and not keep doing the same old thing.”

While it would be fun if food trucks simply shot out of their home restaurants like escape pods, the process is much more complicated.

Seattle may be called the Emerald City, but in our opinion, it’s an absolute gold mine for a culinary entrepreneur looking to get into the mobile food industry.

Seattle is one of the country’s fastest growing cities and had the 14th largest population jump between 2011 and 2012. In that one year time frame, Seattle added 12,638 people, bringing the city’s total population to 634,535. With an increasing population, they have an even faster growing economy with a job rate increase of 2.6% during the same time with median salaries of Seattle residents reaching nearly $70,000 per year.

These facts coupled with a huge number of food truck friendly public events and that it’s a city that has embraced the industry to the point that they have even started using food trucks to help clean up street crime.

Their business community has jumped in to help food truck prosperity by innovative property managers developing sites of new business complexes complete with food truck parking to give their employees mobile dining options.

While the weather may be a little more wet than other cities in our list, the population isn’t discouraged to head outside by a few rain drops. This pedestrian friendly city has approved food truck pods (similar to Portland, OR) so finding one of the nearly 50 existing food trucks isn’t a difficult task.

stop signSEATTLE, WA - The Seattle Department of Transportation is hoping to curb crime with food trucks.

The city of Seattle came up with the idea of lining up food trucks in certain locations around the downtown area to create a more positive atmosphere. They hope the food trucks will create more vibrant, welcoming locations in known problem areas.

SDOT has designated four new food truck vending locations for their pilot program: one site near Westlake Park at Pine Street and Fourth Avenue and three sites at the Pike Street Hillclimb Plaza on the Seattle waterfront.

Food vendors interested in the new downtown locations are encouraged to submit their vending permit applications as soon as possible. Go to the SDOT website for more information about the vending permit process and application.

Monte Cristo Food Truck LogoSEATTLE, WA - Call it a Seattle meltdown. Monte Cristo, the gourmet grilled cheese truck dreamed up by a four-star chef, is leaving the city for Portland.

The “mobile melts” food truck, owned by the Bon Appetit Management Company, will go private, serving employees of a Portland technology company (They’re not saying who yet. Intel, maybe?)

The cheery polka-dotted truck started rolling in October, featuring creative, dressed-up grilled cheeses and soups and sandwiches that used high-quality local ingredients. (Fried Beecher’s cheese curds were a favorite.) It was created by Danielle Custer, a James Beard award-winning chef who had most recently worked in a managerial position for BAMCO, overseeing 150 employees on major projects like setting up a cafe at the Starbucks headquarters. She had loved getting back to line cooking and getting the chance to “play with a dream.”

“It was super fun, it was such a great project,” Custer said by phone yesterday, en route to Portland, where she will be meeting with the truck’s new team. The opportunity “works really well for everyone involved, including me,” she said, though “It’s a little soon for my heart, in all honesty.”

Custer will stay with the company in Seattle — it’s her home, she said, and she has some other projects in the works.

Summer Dog

SEATTLE, WA - Splash on over to the city’s first floating food truck.

Chris Rice (bartender at Ethan Stowell’s upcoming Rione Xlll) and Emma Schwartzman (an alum of The Corson Building and Boat Street Cafe, as well as Stowell’s restaurants) are operating “Summer Dog,” a hot dog boat most commonly found on the water near the UW Waterfront Rec Center or the Arboretum, though yesterday they were also trying out the South Lake Union waterfront park. The 24-foot pontoon boat is “like a floating playpen,” said Schwartzman, albeit one equipped with a professional grill and fridge. It’s got the same permits as any mobile food unit, she said, “ours just happens to be on the water.”

How it works: They tie up at a buoy and take orders from any kayak, stand-up paddleboard, sailboat, motorboat, or other vehicle for people to float their way. They tie up together, take orders, and hand over the finished food. “They’re within arms reach.”

The food is “very straighforward,” Schwartzman said. They’re selling $6 dogs “just like your downtown street-meat-style hot dogs,” including pork and Kosher beef and veggie dogs and bratwurst, served on Franz buns. There’s “every kind of classic condiment you can think of, including the requisite cream cheese and sriracha.” Rice is the grill chef and “likes to get a nice caramelization and char” on the dogs, while Schwartzman handles toppings. Drinks are $2 standard sodas; think Coke, Fresca, root beer.
