If anyone asks you what the hottest trend in the food truck industry, don’t think about different types of cuisine. Think food truck park. If you’ve noticed, this Spring, more than others food truck parks are pooping up everywhere across the US. 

SANTA FE, N.M. — The Meow Wolf Art Complex will turn part of its parking lot into a food truck park for the summer, CEO Vince Kadlubek announced Wednesday.

The Kebab Caravan has been stationed outside the entry almost since the mid-March opening with its Mediterranean offerings, and Taqueria Gracias Madre has joined it. “It’s a classic taco truck, but really good,” Kadlubek said.

Joining them this week or next will be Rainbow Snow, a snow cone truck that has been around for 35 years — probably most people will remember it as being parked near the rafting company on Cerrillos Road a little southwest of the St. Francis Drive intersection, he said.

“We’re looking at an additional two or three (food trucks),” Kadlubek said, mentioning talks with sellers of sliced pizza and East African cuisine. He said he hopes to have all the slots filled by Memorial Day weekend.
