FORT COLLINS, CO – It was a new type of gold rush that inspired Jackee Young to move her family west.

She left her 15-year career as a personal chef in New Jersey to operate a food truck in Fort Collins.

“We realized the food truck industry is still starting here,” Young said after her family visited the area. “In other cities, like back East, it’s crazy busy.”

Young’s Italian-themed food truck Trattoria Oreganata is one of several new Northern Colorado mobile food vendors to launch this year.

At the start of the week, the city of Fort Collins recognized 37 licensed mobile food vendors. There were 25 at the same point last year.

And there is still more demand than supply.

“I’ve actually been stepping back (with scheduling) a bit already,” said Dawn Broeder, a longtime Fort Collins High School culinary instructor who launched Farm Fusion food truck earlier this month.

“I do about three, four events a week right now. If I wanted to and was able to, there’d probably be enough to do seven days a week.”

The local scene currently has so many opportunities that two existing food vendors are launching second operations.
