ELKHART, IN — In the past couple of years, there’s been an increase of food trucks throughout our local area. Trucks that park, usually in a downtown area, and cook and serve food.
Because of growing interest there, Elkhart is in the process of updating an ordinance that regulates food trucks.
Maple Indian Cuisine, based in Goshen, recently became the second company to park a food truck in downtown Elkhart on a regular basis. It originally opened a restaurant in Goshen in 2014.They later built two licensed food trucks, one of those in the Elkhart area.
