LONGVIEW, TX – East Texans will have a new food truck to eat at before the new year.

Divine Catering of Longview should have a food truck ready to operate in the next three to four weeks, restaurant owner Kevin Hawkins said this week.

“We’re trying to grow with the trends, and food trucks are huge in Longview right now,” Hawkins said. “It’s a good craze, and I think it’s going to keep growing.”

Hawkins began working with business partner Brandon Gerfen, a Longview banker, a few weeks ago on the project. His food truck is being built in Houston by Selvin Young, a former Texas Longhorn and Denver Broncos running back who got into building custom food trucks after he left the NFL.

The Divine Catering food truck, which will serve the restaurant’s classic Southern homestyle dishes, will feature two TVs on the exterior — one on either side of the serving window, Hawkins said. That idea came from Young who told Hawkins that other mobile food vendors were starting to place TVs on their exteriors. Hawkins said Young shared ways food truck owners have used the TVs — such as hosting “Madden NFL” tournaments with a PlayStation or Xbox hooked up to them or to show football games while people eat or wait in line.
