As many of you already know we set aside our Monday featured articles for the promotion of the Meatless Monday food program. By doing this, we are able to share information about a program designed to have individuals take one day a week off from eating meat. Not only does this make the individual healthier, but it gives them a way to help do their part in helping the planet.

The recipe we are sharing today comes from Liba Falafel, a mobile food truck, with a built in condiment bar, in San Francisco, California.

Liba Falafel Beets with Lemon and Thyme

Ingredients:

  • 3 pounds loose beets
  • Zest of 1 lemon
  • 1 bunch fresh lemon thyme, or regular thyme, picked and roughly chopped
  • Salt

Directions:

Boil beets, skin on, until fork penetrates easily.

Cool beets under cold water, and refrigerate for at least 2 hours.

Slip peel off beets using gloves or kitchen towel.

Using a mandoline with a julienne attachment, or slicing by hand, cut beets to desired shape/size.

Add lemon zest, thyme, and salt to taste.

Yield: 4 servings
